Slow Cooker Chicken Pot Pie

Ingredients

  • 1.5 lbs (680 grams) Boneless, Skinless Chicken Breast
  • 1/2 cup Chicken Broth, Low Sodium
  • 1/2 tsp Ground Black Pepper
  • 1/4 tsp Dried Thyme
  • 1/4 tsp Dried Rosemary
  • 1 tsp Onion Powder
  • 2 cans (595 grams) Cream Of Chicken Soup
  • 3 Yukon Gold Potatoes
  • 1 Tbsp Garlic
  • 1/2 cup Plain Greek Yogurt
  • 2 cups Frozen Vegetable Mix

Instructions

Step 1

Prep potatoes – dice into small 2cm cubes.

Step 2

Place chicken in slow cooker and pour chicken broth over the top.

Step 3

Season chicken with salt, pepper, thyme, rosemary, and onion powder.

Step 4

Pour cream of chicken soup over the top of the chicken. Then, add potatoes, garlic, and mixed vegetables.

Step 5

Cover and cook on LOW for 6-8 hours, or on HIGH for 3-4 hours.

Step 6

Remove chicken and shred with two forks. 

Step 7

Add back into the slow cooker with Plain Greek Yogurt. Mix until well combined.

Step 8

Serve & enjoy.
